Celery

Celery is the second most important salad crop next to lettuce. It is widely cultivated for its fleshy leafstalk used as a vegetable and seeds which yield essential oil.  The leaf stalks and petioles of celery are eaten raw as salad and used in soups. Celery is also processed by pickling, canning and dehydration. The seed has carminative and nerve stimulant properties; it is used as a neuro-tonic in domestic medicine. Celery is valued as an appetizer and is a source of carbohydrate, mineral, protein, fibre and vitamins.
